Tasting Notes
Yvecourt has a beautiful ruby-red colour. The nose is clean with aromas of fruit and flowers and a few spicy notes. Robust and rich, rounded and supple, it offers all the qualities of a wine made with perfectly ripe, healthy grapes which are representative of their terroir. This wine has perfect balance.
Wine Making
Yvecourt wines are made in accordance with the traditional method. The grapes are de-stemmed and pressed before macerating perfectly naturally for 15 days. The wine is then matured in vats on the finer lees to give it flesh, body and maturity. The Yvecourt has made the conscious decision not to use wood so as to avoid masking the taste of the wine and to respect the fruity qualities of the grapes. Thanks to modern traceability techniques, Yvon Mau can check the origin of each batch. This provides a guarantee of security for the consumer and distributors,
